Auburn, AL: Savanh Thai Kitchen

Auburn sits in the soft rolling hills of eastern Alabama, a college town that moves at its own steady pace. Students and locals share the same streets, the same quiet corners, the same search for a meal that feels like it belongs. On Opelika Road, in a modest spot that has seen more than a few businesses come and go, Savanh Thai Kitchen has held its ground since 2018.

The name comes from Phounsavan, the head chef and mother of three. "Savanh" means heavenly in Thai and Lao. She and her sister Phousone opened the place so Phounsavan could cook the food she grew up with. Their father was born in Thailand and made a life in Laos until the war upended everything. The family eventually found their way to Alabama. Phounsavan learned the family's recipes young, the kind passed hand to hand in a kitchen that had to make do. Now the ingredients come straight from Thailand. Everything is cooked to order. There are no microwaves in the building.

The curries are the heart of it. Massaman is rich and savory, built on coconut and warm spice. Panang carries a quiet sweet heat. Green Curry stays mild. Red Curry is the one that pushes back. You choose the protein and the heat level, and the kitchen meets you where you are. Plenty of the menu can go vegan or gluten-free without losing the point of the dish.

Regulars also reach for the Savanh Pad Thai, pan-fried rice noodles with bean sprouts and green onions, finished with a large omelette and the usual lime and crushed peanuts on the side. Prik Pao brings battered and fried chicken, shrimp, or tofu with bell peppers, onions, carrots, Thai chili, and roasted cashews. Drunken noodles show up often too, wide and flat, stirred with garlic, mushrooms, green beans, and basil.

The room is simple and welcoming. Service tends to feel like family because a good part of it is. Delivery is available when you want the same food at home.

It is an easy place to return to. The food is consistent, the care is obvious, and the flavors stay true to where they started.
